Green Chile, Lime, Pine Nut and Avocado Spread

This spicy spread has about the consistency of good homemade mayonnaise and is great on tacos, sandwiches, or with grilled shrimp or fish.

Ingredients:
  • 1/2 cup extra virgin olive oil
  • Meat of 2 roasted green chiles, stemmed, seeded, and skinned.
  • 1/2 avocado
  • 1/4 cup lime juice
  • 1/4 cup pine nuts
  • 2 cloves garlic
  • 1 teaspoon cumin powder
  • 2 teaspoons salt
Directions:
  1. Place olive oil, lime juice, garlic and avocado into blender or food processor and puree at low speed for 2 minutes.
  2. Add the rest of the ingredients and puree an additional 3 minutes at medium speed.
  3. Serve
