Apple Cake

Ingredients:
Cake
  • 1 cup sugar
  • 4 ounces butter
  • 2 eggs
  • 1 cup flour
  • 1 teaspoon of baking powder

Topping
  • 3 to 4 apples
  • Sugar and cinnamon to taste
  • 1 ounce butter
  • 1 tablespoon lemon juice
Directions:
  1. Preheat oven to 350°
  2. Peel and cut apples into 1-inch wedge slices. Sprinkle with sugar (use part of cake sugar) and lemon juice. Cover and let stand.
  3. Melt butter and cream with sugar. Add beaten eggs. Sift flour and baking powder gradually into mixture. Place mixture into greased 8 to 9 inch baking dish.
  4. Put apple slices all the way around and in the middle of the mixture. Sprinkle some sugar and cinnamon over the apple and 1 ounce of butter (melted).
  5. Bake in a 350° oven for 40 to 45 minutes.

(Any fruit can be used such as apricots, peaches, plums.)
