Bootsie, Winkey and Miss Maude Pie

Ingredients:
Crust

  • ¾ cup walnuts
  • 1 ounce unsweetened chocolate
  • ¾ cup pie crust mix
  • ¼ cup brown sugar
  • 1 teaspoon vanilla extract
  • 1 tablespoon water

Filling

  • 1 ounce unsweetened chocolate
  • â…“ pound softened unsalted butter
  • ¾ cup brown sugar
  • 2 teaspoons instant coffee
  • 3 large eggs

Crust Directions:
1. In the bowl of a food processor, chop walnuts and chocolate finely.
2. Add remaining ingredients and mix until mixture appears medium to dark brown and doughy.
3. Press into a 9-inch pie pan.

Filling Directions:
1. Chop chocolate in bowl of food processor finely, then add softened butter until light brown and creamy.
2. Add brown sugar and instant coffee and blend until well mixed.
3. Add eggs, one at a time, mixing thoroughly for 2 to 4 minutes after each addition.
4. Pour mixture into pie crust and let sit in refrigerator until set. (About 45 to 60 minutes.)

Topping
In a mixing bowl, whip 2 cups heavy cream, 2 tablespoons instant coffee and ¼ cup confectioner’s sugar until stiff peaks form. Spread evenly over the pie.
