Naomi’s Pavlova

This is Naomi’s dessert, It’s a traditional Australian dessert, and it is Delicious!
Ingredients:
For Meringue
  • 3 egg whites 6 ounces caster sugar (very fine sugar, NOT confectioner's, you can substitute regular sugar)
  • 1 teaspoon cornstarch
  • 1 teaspoon vinegar
  • ½ teaspoon vanilla
For the filling
  • ½ pint heavy whipping cream
  • whatever fruit you like!
Directions:
  • Preheat oven to 300°. Place piece of nonstick baking parchment on cookie sheet.
  • Whisk egg whites (on high speed) until they stand in stiff peaks.
  • At low speed, gradually whisk in half the sugar. Fold in the remaining sugar with the cornstarch and vanilla. Beat it again at high speed for another 30 seconds.
  • Spoon the meringue on to the paper and bake in center of oven for 1 hour.
  • Leave it to cool in oven. (It will collapse a bit).
  • Whip the cream until stiff. Spoon over the Pavlova base and arrange the prepared fruit on top. Chill before serving if you like.
