This is Naomi’s dessert, It’s a traditional Australian dessert, and it is Delicious!
Ingredients:
For Meringue
3 egg whites 6 ounces caster sugar (very fine sugar, NOT confectioner's, you can substitute regular sugar)
1 teaspoon cornstarch
1 teaspoon vinegar
½ teaspoon vanilla
For the filling
½ pint heavy whipping cream
whatever fruit you like!
Directions:
Preheat oven to 300°. Place piece of nonstick baking parchment on cookie sheet.
Whisk egg whites (on high speed) until they stand in stiff peaks.
At low speed, gradually whisk in half the sugar. Fold in the remaining sugar with the cornstarch and vanilla. Beat it again at high speed for another 30 seconds.
Spoon the meringue on to the paper and bake in center of oven for 1 hour.
Leave it to cool in oven. (It will collapse a bit).
Whip the cream until stiff. Spoon over the Pavlova base and arrange the prepared fruit on top. Chill before serving if you like.
