Sweet Potato Pie

Ingredients:

  • ¼ cup butter
  • ½ cup brown sugar
  • 1 cup (2 large sweet potatoes, cooked and mashed)
  • 3 eggs
  • â…“ cup clear corn syrup
  • â…“ cup milk
  • ½ teaspoon salt
  • 1 teaspoon vanilla

Directions:

  1. Preheat oven to 425°
  2. Cream together the butter and sugar. Add mashed sweet potatoes and slightly beaten eggs. Mix well.
  3. Combine with syrup, milk, salt and vanilla. Put into unbaked pastry shell. Bake in 425° oven for 10 minutes, reduce heat and continue baking 35 to 45 minutes until knife inserted one inch from edge comes out clean.
