Caramelized Onion Chicken

Ingredients:

  • 1 pound chicken breast tenders
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 teaspoon olive oil
  • ½ cup sliced onion
  • ½ cup seedless raspberry jam
  • 1 tablespoon red wine vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon bottled minced ginger
  • ½ teaspoon dried rosemary

Directions:
Heat oil in large nonstick skillet over medium-high heat. Sprinkle chicken with salt and pepper and add to skillet sautéing until lightly browned and almost done. Remove chicken from skillet and add small amount olive oil. Add onions to skillet and sauté until lightly browned. Return chicken to pan, sauté another two minutes and add the rest of ingredients cooking until thickened, approximately 4 to 5 minutes.
Serves 2.
