Chicken Paprika

Ingredients:

  • 1 medium onion
  • 4 tablespoons olive oil
  • 3½ pounds chicken
  • 2 cups tomato juice (a bit more is better)
  • Pinch oregano
  • 1 large bay leaf
  • Pinch marjoram
  • 1½ teaspoons paprika
  • 1½ teaspoon salt
  • ¼ teaspoon pepper

Directions:
1. Sauté onion in oil, brown slightly. Remove and reserve onion.
2. Brown chicken in onion flavored oil. Add onion, tomato juice (enough to cover chicken), oregano, bay leaf, marjoram, paprika, salt and pepper. Cover, simmer 45 minutes or until chicken is tender.
3. Remove chicken and cut into bite size pieces.
Reduce sauce by one fourth, stirring often. Add chicken to sauce and slowly add sour cream. Heat gently 5 minutes. Serve over rice. Serves 6.
