Crunchy Blue Cheese Cole Slaw

A sweet and sour vinegar based coleslaw, with a hint of blue cheese.


Ingredients:

Slaw

  • 1/2 head green cabbage, shredded or finely chopped.
  • 1/2 head red cabbage, shredded or finely chopped.
  • 1 carrot shredded.
  • 1 red, yellow or orange pepper, thin sliced.
  • 1 cup crumbled blue cheese

Dressing

  • 1 cup apple cider vinegar
  • 1 1/2 cups sugar
  • 1 1/2 tablespoons olive oil
  • 1/2 small onion chopped
  • 2 teaspoons celery seeds
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground pepper
  • 1 tablespoon pressed or finely chopped garlic

 

Directions:
  1. Toss the red and green cabbage, carrot, pepper, and blue cheese
  2. Make the dressing by combining all ingredients and mixing until the sugar has totally dissolved
  3. Pour dressing over salad and combine with your hands or a pair of salad utensils.
  4. Let sit for 15 minutes
  5. Pour off extra dressing and serve.
