Kentucky Black Barbecue Sauce
A classic Western Kentucky Style Black Sauce. Traditionally served with Mutton.
Ingredients:
2 ts Vegetable oil
1/4 c Minced onion
1/4 c Plus 2 tablespoons distilled white vinegar
1/3 c Plus 2 Tablespoons Worcestershire Sauce
2 tb Plus 1 teaspoon light brown sugar
2 ts Lemon juice
1/4 ts Ground black pepper
1/4 ts Tabasco sauce
A scant 1/4 teaspoon ground cloves
A scant 1/4 teaspoon ground nutmeg
1/2 ts Coarse salt
Directions:
Heat the vegetable oil over moderate heat. Add the onion and cook for 5 minutes, or until onion is soft and light golden brown.
Add the remaining ingredient, and simmer, uncovered, for 15 minutes. (The sauce will thicken slightly.)
