Kentucky Black Barbecue Sauce

A classic Western Kentucky Style Black Sauce. Traditionally served with Mutton.
Ingredients:
  • 2 ts Vegetable oil
  • 1/4 c Minced onion
  • 1/4 c Plus 2 tablespoons distilled white vinegar
  • 1/3 c Plus 2 Tablespoons Worcestershire Sauce
  • 2 tb Plus 1 teaspoon light brown sugar
  • 2 ts Lemon juice
  • 1/4 ts Ground black pepper
  • 1/4 ts Tabasco sauce
  • A scant 1/4 teaspoon ground cloves
  • A scant 1/4 teaspoon ground nutmeg
  • 1/2 ts Coarse salt
Directions:
  1. Heat the vegetable oil over moderate heat. Add the onion and cook for 5 minutes, or until onion is soft and light golden brown.
  2. Add the remaining ingredient, and simmer, uncovered, for 15 minutes. (The sauce will thicken slightly.)
