Memphis Style Barbecue Sauce

In Memphis, ribs are traditionally served up dry. Sauce is served up as an optional side. This traditional Memphis style sauce can be used with ribs, or pulled pork with equally happy results.
Ingredients:
2 cups tomato ketchup
1 cup finely chopped onion
1/4 cup cider vinegar
1/2 cup firmly packed brown sugar
3 Tbs. Worcestershire sauce
1/2 cup prepared mustard
2 Tbs. chili powder
1 Tbs. finely ground black pepper
1 Tbs. onion powder
2 tsp. garlic powder
2 tsp. celery salt
1/4 to 1/2 tsp. cayenne (optional)
2 Tbs. peanut oil
Directions:
  • In a medium saucepan, saute the onion in oil until well carmelized.
  • Combine all the ingredients with onion, bring to a boil, stirring to dissolve the sugar.
  • Reduce the heat and simmer for 25 min., stirring occasionally.
  • Whisk well until all ingredients are well blended.
