Memphis Style Rib Rub

In Memphis, ribs are traditionally served up dry. Sauce is served up as an optional side. This traditional Memphis rub can be used with ribs or pulled pork with equally happy results.
Ingredients:
3 tablspoons paprika
1 tablspoon salt
1 1/2 tablspoons onion powder
1 1/2 tablspoons fresh ground black pepper
2 teaspoons cayenne
Directions:
Mix ingredients together. Store in an airtight container. Spread evenly on ribs that have been patted dry and prepared with mustard. Wrap ribs in plastic wrap and store in fridge for 8 to 24 hours. Bring ribs to room temperature before loading them in the cooker.
